From Ireland to France
With flat oysters and tsarskaya
Have fun discovering the differences between oysters! Taste three different types, shaped by the hands of the historic Cancale oyster farmer "Les Parks Saint Kerber", you can taste the Belon papillon, the Tsarskaya caliber 3 also called "Oysters of the Tsars" and the Fine di Cancale caliber 3. You will receive four oysters for each typology, for a total of 12 pieces.
LIKE A "VISIT AT THE MAISON"
Just as if you were transported to France in the Cancale bay a stone's throw from the sea, you will be able to taste the three productions of this oyster farmer, who made the history of French oyster farming.
HOW TO TASTE THEM?
Accompany them with a traditional Muscadet from the Loire, taste them in this order:
Tsarskaya caliber 3: a true legend among oysters, also known as the favorite oyster of the Tsars. With a high rate of meat that is around 15%, you can taste an oyster with a long persistence, crunchy, sweet and sugary
Fine of Saint Kerber, Cancale caliber 3: a lower meat content of 11-12%, will make you appreciate a greater flavor and a distinctly vegetable aftertaste, despite being raised in the same waters as Cancale
Belon papillon: also known as "the summer belon", it is distinguished by its small size, which is why it takes the name of "papillon" or "little butterfly". It is actually the only caliber available only in summer. Like all belons, this oyster is susceptible to water loss as it is flat.
Have fun accompanying them with bordier bread and butter, also try the combination of oysters and Tabasco!
