The Marennes-Oléron district is the most important oyster farming zone in France, which has optimal natural conditions for oyster farming.
Over the centuries, the producers of this region have been able to raise a simple oyster farming to real art, using the ancient clay salt pans called "claire" to finish the oysters after a growth process that can take place on the entire French coast. Thanks to this process, the Speciale de Claire oysters (wich means finished in claires) can boast the European recognition of Protected Geographical Indication - PGI. The finishing practice respects a strict specification, for at least 28 days they are immersed in the claire with a density of 3 kg per square meter, this gives the oyster a characteristic nutty taste.
