The scallop is a bivalve with a characteristic fan shape. Caught off the coasts of North America, it is processed and marketed fresh.
The specialty we offer is a generously sized American scallop with an intense aroma, very practical because it is already clean and ready to use: when whole it is opened, cleaned and deprived of all its contents (including the orange coral) and therefore remains alone. the white pulp.
We recommend tasting it raw, scalloped and seasoned with good extra virgin olive oil or lightly seared with butter and thyme, or in the classic gratin recipe.
