Bivalve molluscs, live in colonies in sandy or muddy bottoms. Once in Italy they were very common along all the coasts, today less due to intensive fishing.
Sea truffles are fished all year round with hand rakes by divers; it is not raised.
Areas particularly rich in these delicious molluscs are able to offer underwater fishermen even 10-20 kg of truffles per day, even if several collection points once extraordinarily lavish, are now slowly running out.
They are not easy to find on the market. They are very tasty and the mollusc is large and fleshy, perfect to be tasted even raw.
They are cleaned by letting them drain in fresh and salty water for at least three hours, taking care to carefully clean the sand that is outside the shell stuck in the roughness.
The availability of this product will vary based on the catch on the day of shipment.
