Advice for preparation: to fully appreciate the flavor of this foie gras, it is necessary to bring it to its tasting temperature, without ever cooking it, i.e. from 8 ° to 10 °. Once the time has come to consume it, cut it with a knife wet with hot water (or with the Lira) into slices of about 0.5-1 cm thick. Absolutely not to spread! Arrange on a slice of brioches paired with jams, pickled gherkins and sweet or musty wines such as Sauternes.
