For our bottarga we have selected the most important producer in Sardinia, which guarantees us the absolute quality of the mullets used. Bottarga with nail is made by leaving part of the egg sac closed. With drying, the ventral tends to attach itself to the eggs. This process is a guarantee of an artisanal and high quality production.
