Faced with a Bollinger, the ideological (and sometimes philosophical) disquisitions on Champagne fall.
60% Pinot Noir, 25% Chardonnay, 15% Pinot Meunier.
It is an extraordinary wine for its elegance, pleasantness and richness.
The Special Cuvée represents the "Bollinger style", ferments partly in small steel vats and partly in wood. It ages for at least 3 years on the lees and another 3 months in the bottle before shipping.
It has a golden yellow color and a fine and persistent pérlage. The perfume is decidedly complex and elegant and in the mouth it is confirmed as decidedly dry, with great structure and long persistence.
