The essence of oysters
Marennes-Oléron district is the most important in oysters farming and finishing in France, in fact this region has perfect natural conditions for oyster growth.
Over the centuries, this region producers were been able to farm oyster using the ancient clay salt pans called "claire" to finish the oysters after a grow process that can take place on the entire French coast. Thanks to this process, Fine de Claire (wich means "refined in the claire") can boast the European recognition of Protected Geographical Indication - PGI.
The finishing process undergoes to strict processes dictated by production specifications: for at least 28 days they are kept in the claire with a density of 3 kg per square meter, this gives the oyster a characteristic nutty flavor.
WHICH CALIBER TO CHOOSE?
Choosing a larger caliber, such as the number 1 will allow you to have a rich flashness and saltyness. A small caliber, such as number 4 will taste more delicate and less persistent.
