Since 2007, the young generation has invested in technology, importing a particular farming system with tilting bags from Australia. This allows the waves to impact the oysters into each other, smoothing the shells and ensuring that the shell is almost perfect. The ocean currents that break the coasts of Gouville - Sur-Mer in Normandy are what it takes to shape an oyster with elegant lines and a unique flavor.
This selection is the perfect expression of the close relationship between man and nature. The shell is smooth, with granite shades. The wide arch that describes the mother of pearl welcomes a prosperous fruit, outlined by a mantle with dark edges. On the nose we feel an intense sea breeze, typical in the west exposure of the Contentin peninsula. Upon tasting we will travel for a few seconds in the balsamic minerality of this oyster, the savory vein will be immediately compensated by an unexpected sweetness, ascribable to cane sugar, by a magnificent crunchiness and by a veiled sweetness that will make the bite remember for infini seconds .
