From today we are introducing a third green oyster in our wide selection! "La Sublime" is an excellent production, the result of the Geay family who for five generations have been demanding the best from their exclusive oysters. The company located in La Tremblade near Marennes Oleron, is today managed by a young and talented thirty-year-old heir, Monsieur Adrien.
As for the famous "Emeraude", Adrien has decided to interpret the classic and iconic "Fine de Claire Verte PGI" wanting to go beyond the specifications of the Marennes Oleron consortium.
AN ARTISAN INTERPRETATION
The oyster is reared according to a strict discipline created by Adrien's own family, which further enhances that of the traditional green oysters of Marennes Oleron. The oyster is in fact grown for about 30 months, a long time to get the most out of the ocean. In the last 20 days a special refinement takes place in a natural way, inside the clay tanks called "Claire", typical of the district of Marennés d'Oleron. In fact, only in the best Claire does the "Navicule bleu" algae proliferate, a native algae that dyes the gills green, giving beauty and a truly unique taste. By decreasing the stocking density and increasing the selection of oysters, Adrien creates a more meaty and prestigious product than its still excellent younger sister. TASTING NOTES
The oyster has a jagged shell with pearly hues. On the nose we will be able to appreciate the characteristic brackish scent, a heritage of the salt pans. The fruit has a characteristic emerald green color given by the Navicule bleu seaweed present in the clairas exclusively in the period October-April. Upon tasting we will be captured by an unexpected taste, initially the flavor will prevail, after the first seconds we will discover how the seaweed gives a slightly ferrous taste, similar to the marbling of the best French cheeses. The taste is deep and persistent, you will not easily forget this great gastronomic experience.
