A UNIQUE PRODUCT
In france Poussé means "Pushed" or "Crushed", Claire is the name of the natural salt clay pans, once used as to the salt extraction, in which oysters are now refined. This product main characteristic that every single oyster is "sown" during spring season when it weighs only 30 grams, with a density of only 2 or 5 oysters per square meter. The low breeding density allows them to grow exponentially and become extremely fleshy in just 5/6 months. The meat rate can exceed 16%!
